Pork Larb & Rainbow Vegetable Stir-fry

Ingredients

1 cup Woolworths jasmine rice

2 tsp vegetable oil

1/3 qty Fragrant pork larb, reserving coriander leaves and sliced red onion

400g Woolworths COOK stir-fry mix rainbow vegetables

2 tbs salt-reduced soy sauce

1 long red chilli, thinly sliced

Method

Step 1 of 3

Cook rice according to packet directions.

Step 2 of 3

Meanwhile, heat oil in a wok over medium-high heat. Add larb mixture and onion. Stir-fry for 4 minutes or until hot. Add vegetable mix and soy, and stir-fry for a further 3 minutes.

Step 3 of 3

Ladle stir-fry over rice. Top with coriander and chilli. Serve.

This colourful stir-fry makes the most of pre-made fragrant pork larb, Woolworths vegetable mix, and delicious sauces for a quick and easy weeknight win.
